Tonight I broke my cardinal rule of baking: I ripped open a Betty Crocker box. Baking from scratch is something I’ve always taken pride in. However, this evening I’m in a bit of a rush and some expedient “cupcakes in a box” were the solution.

I love to bake when I have the time and am in the mood for it. Last year I went into a holiday baking frenzy. I think when I get back from my trip it will be time to dig out the cookie cutters!

you go girl! those smartie covered cupcakes remind me of “bring-baked-goods-to-school-for-your-classmates-on-your-birthday” day when my poor working mum would have to whip up something at the last minute which would always be: 1) rice crispy squares or 2) Betty Crocker or Duncan Hines’ brownies or cupcakes.

I seem to recall you’re from Victoria, right? I just spent a few days there and it was pretty awesome! I love your city. I hope to spend some more time soon! I did a few restaurant reviews on my blog, including a cute diner (Rosie’s Diner) on Cook Street village.
